Moot Meals! Breakfast burrito Edition

How to make homemade turkey sausage and a quick meal!


  • 1 - 1 1/2 lbs. Ground Turkey
  • 2 Tblspns. ground Thyme
  • 3 Tblspns. ground Sage
  • 1 Tblspns. Crushed red pepper
  • 1 Tblspns. Coarse Black Pepper
  • 1 Tblspns. Koasher salt


  1. Mix ground turkey and ingredients in bowl. It's best to use your hands to thoroughly mix spices... Gross, I know, but it's the best way to make sure they're all evenly mixed in.
  2. Heat medium sized pan and brown meat. This takes a while and you have to be sure to constantly stir the meat or it will all clump up and you'll have to chop it all up afterwards.
  3. Brown, brown, brown and voila, you've made turkey sausage! 
  4. (Optional) If you don't break it up as it's cooking (My arms got tired, so mine came out a little chunky) you can use two knives or a pastry blender to chop it up in the bowl.

Now on to the quick meal!

Healthy breakfast omelet

I hate eggs, but if you mix it with some cheese and turkey sausage and wrap it up in a tortilla... I'll eat them all day! This takes maybe five minutes and is the perfect meal to throw together before class or work in the morning. It's pretty heathy too!


  • Homemade turkey sausage (or normal sausage; it's up to you)
  • Real sharp cheddar cheese
  • 1 or 2 eggs (depends on how full you want your burrito)
  • Med or Large soft flour tortilla shell
  • Salsa to dip it in - My fave is the Ortega brand in mild... I'm addicted to that stuff
  • Med. non-stick saucepan

Let's get cooking!

1. Gather your ingredients! 

2. Scoop 1 - 2 tablespoons of turkey (or real) sausage into medium saucepan and heat on medium
3. Scramble 1 or 2 eggs and add in a palmful of cheese

4. Once sausage is sizzling, add cheesy eggs and scramble
5. Once eggs and sausage are scrambled, heat tortilla in microwave for 10 - 15 seconds

6. Wrap scrambled eggs in the tortilla and serve with your choice of salsa or dressing!

Now, this is in no way the concrete recipe for this breakfast burrito. Add veggies or ham or turkey or steak or anything! It's really an easy, less than five minute heat and eat kind of meal that's filling and better (I think anyway) than Eggo waffles or sugary cereal.
